Stir-fried Beef and Vegetables

Ingredients:

500 grams of beef (diced or sliced)
1 onion 
1 celery stick
200 grams mangetout beans (Sitsaro) (cut in half)
200 grams young corn (cut about 1 inch long)
2 medium size carrots (sliced)
1 and 1/2 tbsp of oyster sauce
1/2 cup water
2 tbsp sunflower or vegetable oil
1 tsp salt

For the marinade, mix the following ingredients in a bowl.
1 tbsp Mirin
1 tbsp Light Soy Sauce or any Filipino Brand Soy Sauce
1/2 tsp toasted sesame oil (regular sesame oil is okay)
pinch of salt 
pinch of pepper

Congee

Some uses chicken wings or tripe for this recipe. Commonly, I use chicken breast for a lot healthier meal since chicken wings bear more calories and fats compare to chicken breast.



Ingredients:

1 cup glutinous rice (or regular rice will do)
Water
300 grams of chicken breast (boiled and shredded)
7 gloves of garlic
1 medium size onion
2 tablespoons sliced ginger
2 teaspoons of fish sauce
Salt and pepper
Spring onion (sliced)

Potchero

You'll notice that this recipe of potchero is a bit different from the traditional one. The difference, I did not use any tomato.


Tips:
  1. Cut the banana and sweet potato about 1/3 inch. If you cut them thin, they will end up so mushy. 
  2. Watch out for the heat of your stove. 
  3. Do not boil it when you already add the cream, just simmer. 
  4. Make sure that the chicken are well cooked.

Ingredients:

1 kg Chicken
2 medium size sweet potato (sliced)
2 plantain (or 4 saba banana) (sliced)
200 g green beans (cut into half)
1/4 cabbage (sliced)
1 onion (sliced)
3 garlic cloves (crushed)
1 Nestle Cream
1 tbsp fish sauce
2 1/2 cups of water
pinch of pepper
Cooking oil
Salt to taste



Method of Cooking:

  1. Heat the oil in a frying pan then fry the plantain. Set aside.
  2. Then pan fry the sweet potato. Do not over cooked them so it won't become mushy. Set them aside.
  3. Set the stove on medium heat. In a separate cooking pot or wok, put some cooking oil and sautĂ©  garlic, onion and fish sauce. Stir in the chicken for 3 minutes. Pour the water. Cover the cooking pot/wok. Let it boil for about 20 minutes. 
  4. Add in the beans and cabbage and simmer for 10 minutes.
  5. Lower the heat of the stove. Pour the Nestle cream and let it simmer for 10 minutes. Do not boil.
  6. Finally, add the cooked plantain and sweet potato. Sprinkle a pinch of pepper. Let it simmer for 5 minutes. 
  7. You may want to season it with salt depending on your taste. 
  8. Serve with boiled rice.
