Palitaw

One easy Filipino dessert to make is what we called "Palitaw". It's a glutinous rice cake with shredded coconut all over. It is best served and eaten with sugar and sesame seed dip.

Ingredients: 

2 cups Glutinous Rice Flour
3/4 - 1 cup Water
3 cups Shredded Coconut

For sugar dip:
5 tablespoons sesame seed
2 cups white granulated sugar


Procedure:

1. Mix glutinous rice flour and water. 
(Remember to add water little by little. You may need to add few spoons of glutinous rice flour if mixture is too sticky.)
2. Boil water. Put the rolled dough and wait for them to float.
3. Cover with shredded coconut once remove from the boiling water.
4. Make the sugar dip by roasting the sesame seed. Then mix with sugar. 


The last time I made this dessert was with my 7 years old lovely niece. She practically did it by herself. I was just there to assist her especially during the boiling step.
